Monkey Butter
Banana Jam

1 20 oz can DOLE crushed pineapple
3 cups white sugar
5 medium bananas, no bruises (at least 3 cups)
1 very juicy lemon or 2 small
1/2 cup of fresh or canned coconut
1 teas. Lemon zest.

In a large crockpot pour in the pineapple, and add sliced bananas.  Mash the fruit into the pineapple with the lemon juice and zest. Add the sugar and stir very well.  Let the sugar dissolve and wipe down any sugar crystals before turning the crockpot on high.  Cook for an hour, if you want a smoother texture, I scoop some of the mixture out and put in my mini food processor for a bit and add back to the crockpot.  When the back of a spoon is drawn across the top you want only a little loose juice to float on the spoon.  It is going to cook in the BWB for another 20 minutes.  Ladle right from the crockpot to your 1/2 pint jars.
Great on ice cream, pancakes or muffins or an addition to Carrot Raisin Salad.


FROZEN CUCUMBER PICKLES

2 qts. unpeeled cucumbers, sliced
1 onion sliced
2 Tbs. salt
1 qt. water 
Soak the cucumber slices for 2 hours in salt water
Drain
Mix: 1 1/2 Tbs. celery seed or dill seed
(some like mustard seed  or a combination)
3/4 c. white sugar
3/4 c. White House Apple Cider Vinegar
Add cucumber and onion slices
Let spices, sugar, and vinegar mix set for a couple of hours
You can heat briefly and let cool.
Mix drained cucumbers, sliced onions, vinegar, sugar and spices
Divide into 3 or 4 qt. ziplock bags and freeze.
Wait at least 1 week, if you can, for the best flavor.
Thaw only what you will use in a few days, and eat while cold.
Slices can also be put in canning jars or plastic containers.

Pumpkin Butter
Can be doubled

29 oz. canned Libby's Pumpkin
1 cup of apple juice, I use Mott's All Natural
1 1/2 cups white sugar
Cinnamon
Nutmeg
Ginger (1/8 teas.)
Allspice     (I use a total of 1 1/2 teas. total of all or some of the above spices)
Add the pumpkin to the crockpot. Add the spices to the sugar in a cup and throughly mix.  Stir in the sugar mix till it is disolved before turning the crockpot on high.  It should take about an 2 hours to have thickened up like apple butter.  Draw the back of a spoon across the top.  There should only be a little juice that runs in the spoon.  Ladle into pre sterilized canning jars leaving 1/8 head space and BWB for 20 minutes.
