Super Easy Smoothies.

Taco Salad

Fun for the family to each make a different food
and line them up for the family to "build their own".

From bottom to top:

Crushed Tortilla Chips
Shredded Lettuce
Taco or Chile flavored beef or turkey
Homemade salsa
Sour cream
Finely diced cheddar cheese
On the side I have some sliced avocado
Fresh pear for dessert
Tips:
Add black beans with the meat
Salsa: 3 fresh tomatoes, 1/2 onion, 1/4 cup fresh cilantro,
2 garlic cloves, cumin and chili seasoning  Pulse in the food processor.

Peanut Butter Play Dough
2 cups creamy peanut butter
1 cup light corn syrup
2 teas. vanilla
Mix well with a large sturdy metal spoon
Add:
2 cups of sifted powdered sugar
Blend well
Add:
2 more cups of powdered sugar

You will end up with a dough much like play dough.  Knead until it is no longer sticky.  You may need a little more or less sugar..
Divide into zip lock bags.  When the kids are all assembled, give each one their own bag.  They can make their little creations to put on their party plate, complete with mini candies for eyes and such, and then eat them afterwards.  You can even put it back in the baggies to play with later.

FOR THE ADULTS:  this makes delightful mini peanut butter balls to serve on the side, for a dessert.  Some recipes call for powdered milk.  Unless you have access to the milk that is a powder and not the granular texture that is common in the stores, stick to the powdered sugar.  If you can find a powder, use 1/2 sugar and 1/2 milk. If Disney can do it, so can you, and a whole lot cheaper !

HOME MADE PIZZA
Cheaper by the dozen

First assemble all your ingredients on plates.

Form an assembly line and make as many as you like.

5 - 6  BBQ Chicken Pizzas

Spread 1 - 2 Tbsp. BBQ sauce on each crust
 1/2 cup meat
Moistened with BBQ sauce
Top with 1 slice of diced pineapple
1 Tbsp. sliced black olives
1/2 cup Shredded Gouda or Quesadilla Cheese
3 - 4 sprigs of cilantro
Slip each one in a baggie and freeze.

For 5 - 6 Pizzas you will need 2 - 3 cups of diced chicken,
1 1/2 cups of BBQ sauce, 6 slices of pineapple,
 4 oz. sliced black olives
8 oz. of shredded Gouda or
Quesadilla Cheese and some fresh cilantro.
Bake at 375 degrees for about 15 minutes.

Freezer Ready Smoothies

This is so neat, can't believe it never dawned on me.

Keep a large plastic tub in the freezer and mark it Smoothie Mix.  Now, when you have leftover bits of banana, (slice it) one peach half, a couple of strawberries, 1 pineapple slice, you name it, put it on a small plate and freeze. When you come back to the freezer later, put it in the bucket. You'll be surprized how quickly an assortment can build up.
Now, are you ready?
Just dip in the assortment for a cup of frozen fruit and put it in your blender along with a little juice or yogurt and you have a "ready to go" Fruit Smoothie.
