In this section you will find soups made in crock pots and steamers like
Chicken and Vegetable, Tomato and a Simple Vegetable.

Crockpot  Vegetable Soup


A perfect soup for a chilly evening, and easy to prepare in a crockpot. This recipe fills a medium size one. This picture was taken about half done. Longer cooking makes it creamier, especially after I take the potato masher to it.


In the following order
Saute 2 strips of bacon in a medium non stick skillet
Pour 1 32 oz. container of chicken broth into a crockpot
Add 1 medium diced sweet onion to the skillet
Saute till nice and juicy
Add this to the chicken broth in the crockpot.
Dice 4 large red skin potatoes and add to skillet with bacon drippings
Add 2 garlic cloves, minced
Pour in one 10 oz. can of chopped green chilies and tomatoes to the crockpot
Finely dice 3 stalks of celery and add to crockpot.
Slice 12 fingerling mini carrots
Add in with the 12 oz. of frozen sweet corn
Set crockpot on high for 2 - 3 hours
When ready to serve, remove the lid and wait 10 minutes
Add about 3/4 cup of half and half. if you like a cream soup
Simmer another 1/2 hour.
Some additions can be parsley, Cayenne pepper, salt and freshly cracked black pepper
Of course when I have extra crispy bacon around, I sprinkle that on top too.

I served this tonight with Grilled Cheese Sandwiches. Yum !

If you make a large batch of soup, people can dip out some to fill their coffee mug, and reheat it the next day.

Homemade Tomato Soup
I need to remember to take pictures before we eat!
1. 1 qt. chopped red ripe tomatoes, canned or fresh, with juice
2. 1 qt. chicken or beef broth
3. 1/2 cup onion, lightly sauteed in olive oil
4. 1 stalk celery, diced and added to onion
5. 1-2 carrots, microwaved in a small amount of broth and sliced
6. 1 garlic clove, sliced
7. 2-3 teaspoons of flat leaf parsley
8. 1/2 cup of cream, if you like
9. Salt / Pepper
10. Butter pat for the top of each bowl

Saute' vegetables till almost done and add to tomatoes
in a medium stainless steel saucepan. Simmer for 15 minutes. Add parsley, salt and pepper.
Pour in cream, 5 minutes before you serve and top with a butter pat.

Homemade Vegetable Soup

This is an ever changing soup, but here are a few basics.




The Broth: chicken broth, beef drippings (broth),
Vegetable broth simmered fresh carrots,celery and onion with herbs
Equal parts water and canned tomato based pasta sauce
The Cooker: steamer (on the table in an hour)
or
Crock pot, ready in two hours or longer,
This really is best with a meat based soup
because you cook your meat first
and then add your vegetables toward the end.

The steamer is my favorite. It's fast and easy. Whether you fine chop or large chunk, make the vegetables about the same size. If using sweet potatoes and carrots, large chunk is fine, just remove them after 30 minutes to dice when their soft enough to cut.  Return to steamer. Put potatoes on the bottom. A rule of thumb for a great soup. I use the rainbow, carrots, tomatoes, bell pepper, cauliflower / or sweet potatoes, Roma tomatoes, celery, carrots, onion and zucchini or asparagus / unpeeled red rose potatoes, celery, parsley, onion, cooked bacon.

About the broth: I never put more than one cup of liquid in a steamer, because it makes some juice on it's
own. Check this level towards the end. If your making potato soup, add 1/2 to 1 cup of chicken broth and finish off with the milk when your potatoes are very soft..

About cheese: Parmesan is a really good choice, but add it at the end and set a shaker on the table.
Garlic: slice it thinly.
Things that don't do well:  like broccoli, just microwave it and add it at the end.
Corn kernels may add color but no taste.
Seasoning: Taste your soup after it's done, then consider if it needs something past freshly ground sea salt and fresh cracked black pepper with a pat of butter on top.

About toppings in the soup bowl: avocado slices, crisp bacon, cheese, fresh flat leaf parsley, crushed tortilla chips and a pat of butter.

About dessert, I core and slice in half  apples and place them cut side up on top.. Great to set on the side sprinkled with cinnamon sugar. Enjoy.
